Midnight Swiss & Bacon Melts

This is one of my all-time favorite midnight snacks—and my husband’s too. It’s that perfect mix of salty, creamy, crispy, and melty that satisfies every late-night craving. With smoky bacon, buttery bread, and gooey Swiss cheese, it’s comfort food at its finest. Ready in minutes and always a hit.


Ingredients

  • Thick-cut bacon (4–6 slices, or as desired)
  • Unsalted butter
  • Mayonnaise
  • Swiss cheese, sliced
  • Bread of choice (we love sourdough or rustic white)

Instructions

Bake the Bacon

  1. Preheat your oven to 400°F.
  2. Line a baking sheet with foil or parchment paper and lay out the bacon slices.
  3. Bake for 15–20 minutes, or until the bacon is crispy and golden.
  4. Remove from oven and set aside to cool slightly.

Toast the Bread

  1. Switch your oven to low broil.
  2. Arrange your bread slices on a baking sheet and top each with a slice (or two) of Swiss cheese.
  3. Place under the broiler just until the cheese is melted and bubbly—watch carefully so it doesn’t burn!

Assemble the Sandwich

  1. Remove the cheesy bread from the oven. Spread a light layer of unsalted butter on the toasted side.
  2. Add a swipe of mayonnaise, then layer on the crisp bacon.
  3. Close up your sandwich (or enjoy it open-faced!) and dig in while it’s warm and gooey.
