This is one of my all-time favorite midnight snacks—and my husband’s too. It’s that perfect mix of salty, creamy, crispy, and melty that satisfies every late-night craving. With smoky bacon, buttery bread, and gooey Swiss cheese, it’s comfort food at its finest. Ready in minutes and always a hit.
Ingredients
- Thick-cut bacon (4–6 slices, or as desired)
- Unsalted butter
- Mayonnaise
- Swiss cheese, sliced
- Bread of choice (we love sourdough or rustic white)
Instructions
Bake the Bacon
- Preheat your oven to 400°F.
- Line a baking sheet with foil or parchment paper and lay out the bacon slices.
- Bake for 15–20 minutes, or until the bacon is crispy and golden.
- Remove from oven and set aside to cool slightly.


Toast the Bread
- Switch your oven to low broil.
- Arrange your bread slices on a baking sheet and top each with a slice (or two) of Swiss cheese.
- Place under the broiler just until the cheese is melted and bubbly—watch carefully so it doesn’t burn!

Assemble the Sandwich
- Remove the cheesy bread from the oven. Spread a light layer of unsalted butter on the toasted side.
- Add a swipe of mayonnaise, then layer on the crisp bacon.
- Close up your sandwich (or enjoy it open-faced!) and dig in while it’s warm and gooey.
