with Italian Potato Salad and Asparagus
This meal feels like a special occasion—whether it’s a weekend date night at home or just a Wednesday when you need something indulgent. Perfectly seared filet mignon is finished in the oven with a pat of butter, then served alongside a classic baked potato and tender-crisp asparagus. It’s a hearty, steakhouse-style dinner made with love from your own kitchen.
Ingredients
For the Filet Mignon:
- 2 filet mignon steaks (about 6 oz each)
- 1 tablespoon extra virgin olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 tablespoons unsalted butter
For the Baked Potatoes:
- 1 1/2 lbs of Mini Medley organic potatoes or Yukon gold.
- Avocado oil, for baking
- Kosher salt
- 2 tablespoons of olive oil for drizzling after cooked
- 1/4 teaspoon of Italian seasoning
- Salt and Pepper to taste
For the Asparagus:
- 1 bunch fresh asparagus, ends trimmed
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: zest of 1/2 lemon
- 1/4 cup of parmesan reggiano cheese.
Instructions
Bake the Potatoes:
- Preheat oven to 425°F.
- Scrub potatoes clean, dry them, and slice in half for the smaller ones and quarters for the bigger ones. Drizzle avocado oil on them and salt and pepper. to taste
- Place in middle of rack on a baking sheet and bake for 45-60 minutes, until skin is crisp and a knife inserts easily.
- Place in a bowl and toss with olive oil and Italian seasoning.



Prepare and Cook the Filet Mignon:
4. Pat the steaks dry with paper towels. Coat lightly with olive oil. 5. Season both sides generously with salt, pepper, garlic powder, and onion powder. 6. Heat a cast iron skillet over medium-high heat. Sear steaks for 5 minutes on each side until a deep brown crust forms. 7. Top each steak with 1 tablespoon of butter and transfer the skillet to the oven under the broiler (rack in top position). Broil for 2-3 minutes or until internal temp reaches your preferred doneness (125°F for rare, 135°F for medium-rare).
Roast the Asparagus: 8. While the steaks rest, toss asparagus with olive oil, salt, pepper, and lemon zest (if using). 9. Spread on a baking sheet and roast in the oven at 400°F for 10-12 minutes until tender but slightly crisp.
Assemble and Serve: 10. Plate each filet with potato salad and a serving of asparagus. Add your favorite toppings to the potato.
