Ingredients:
- 2 yellow bell peppers, cut into strips
- 1 package of your favorite sausage (For this recipe, I used Marketside smoked sausages)
- Potatoes (for mashed potatoes – see linked recipe)

Instructions:
- Preheat your oven to 425°F (220°C).
- Cut the yellow bell peppers into strips and place them in a roasting pan.
- Lay the sausages on top of the peppers in the roasting pan.
- Roast everything in the oven for about 40 minutes, or until the sausages are cooked through and slightly browned, and the peppers are tender.
- While the sausages and peppers are roasting, make your mashed potatoes. You can follow my recipe for Mashed Potatoes.
- Once everything is ready, plate your roasted sausages and peppers alongside the mashed potatoes.
