Bramble & Butter’s Bangers and Mash

Ingredients:

  • 2 yellow bell peppers, cut into strips
  • 1 package of your favorite sausage (For this recipe, I used Marketside smoked sausages)
  • Potatoes (for mashed potatoes – see linked recipe)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Cut the yellow bell peppers into strips and place them in a roasting pan.
  3. Lay the sausages on top of the peppers in the roasting pan.
  4. Roast everything in the oven for about 40 minutes, or until the sausages are cooked through and slightly browned, and the peppers are tender.
  5. While the sausages and peppers are roasting, make your mashed potatoes. You can follow my recipe for Mashed Potatoes.
  6. Once everything is ready, plate your roasted sausages and peppers alongside the mashed potatoes.
